Ingredients:

  • 3 pounds of chicken tighs and wings
  • 1 pack of Bailan Piri Piri 
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • Lemon wedges, for serving

 

How To:

  1. Prepare the chicken by cleaning and patting it dry with paper towels. Place it on a cutting board and use a sharp knife or kitchen shears to remove the backbone. Press down firmly on the breastbone to flatten the chicken (this is called spatchcocking), which will help it cook more evenly on the Braai.

  2. In a small bowl, combine the minced garlic, lemon juice, olive oil, paprika, thyme, oregano, salt, and black pepper. Mix well to create a marinade.

  3. Place the flattened chicken in a large resealable bag or a shallow dish. Pour the marinade over the chicken, making sure to coat it thoroughly. If desired, you can add additional spices or herbs to customize the flavor.

  4. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 2 hours, or overnight for best results. This will allow the flavors to penetrate the chicken.

  5. Preheat your Braai (barbecue) to medium-high heat. If you're using charcoal, make sure the coals are hot and covered with white ash before cooking.

  6. Remove the marinated chicken from the fridge and let it sit at room temperature for about 15 minutes.

  7. Place the chicken on the Braai, skin side down, and cook for about 10-15 minutes until the skin is crispy and golden brown. Flip the chicken over and cook for another 10-15 minutes until the internal temperature reaches 165°F (74°C) and the juices run clear.

  8. Remove the chicken from the Braai and let it rest for a few minutes before carving. This will help the juices redistribute and keep the meat tender.
