Ingredients
- 4 scallions
- 1 can black beans, rinsed and drained
- 2 ounces tortilla chips
- 1 large egg
- 1tbsp Bailan Piri Piri Grill & BBQ Rub
- Salt to taste
- 1/2 cup of mayo
- 2 pounds of sweet potatoes
- 3 tbsp vegetable oil
- 1 tomato
- 1 avocado
- 1 small head of lettuce
- 4 hamburger buns
- salt to taste
How To
- Process tortilla chips in a blender till fine.
- Add beans, scallions, egg, Bailan Piri Piri, and salt. Pulse till beans are finely chopped and well blended with mixture.
- Separate the mixture into 4 portions and shape into 1-inch thick round patties. Refrigerate for 20mins
- Cut sweet potatoes into strips, drizzle a bit of vegetable oil and bake for 12-15 minutes till tender.
- While the sweet potatoes cook, heat oil in a non-stick pan and cook burgers until they are browned and well cooked—about 4mins per side.
- Cut the lettuce, slice the tomatoes and avocado, and spread the mayo on the burger buns.
- Place the burger on the buns, top with tomatoes, lettuce, and avocado. Serve with sweet potatoes.
