Black Bean Burger

Ingredients

  • 4 scallions
  • 1 can black beans, rinsed and drained
  • 2 ounces tortilla chips
  • 1 large egg
  • 1tbsp Bailan Piri Piri Grill & BBQ Rub
  • Salt to taste
  • 1/2 cup of mayo
  • 2 pounds of sweet potatoes
  • 3 tbsp vegetable oil
  • 1 tomato
  • 1 avocado
  • 1 small head of lettuce
  • 4 hamburger buns
  • salt to taste

 

How To

  • Process tortilla chips in a blender till fine.
  • Add beans, scallions, egg, Bailan Piri Piri, and salt. Pulse till beans are finely chopped and well blended with mixture.
  • Separate the mixture into 4 portions and shape into 1-inch thick round patties. Refrigerate for 20mins 
  • Cut sweet potatoes into strips, drizzle a bit of vegetable oil and bake for 12-15 minutes till tender.
  • While the sweet potatoes cook, heat oil in a non-stick pan and cook burgers until they are browned and well cooked—about 4mins per side.
  • Cut the lettuce, slice the tomatoes and avocado, and spread the mayo on the burger buns.
  • Place the burger on the buns, top with tomatoes, lettuce, and avocado. Serve with sweet potatoes.
